COOKING METHOD :
- Peel and wash the sweet potatoes and cut them into small squares.
- Boil in 2 cups of water for 10 minutes
- In other saucepan, simmer the coconut milk with a pinch of salt and the brown sugar, stirring and being careful that the coconut milk doesn't quite come to the boil.
- When the sugar is dissolved, put in the sweet potatoes and continue to simmer for about 10 to 15 minutes, until potatoes are cooked.
- Serve hot.
