Material needed :
- 1 x 310 g can whole kernel corn
- 2 eggs
- A pinch of salt and pepper
- 1/2 cup plain flour
- I teaspoon baking powder
- 1/4 cup grated cheese
- 25 g butter
- 2 tablespoons oil
Procedure :
- Drain the corn and discard the liquid
- Put eggs, salt and pepper in a bowl, beat well
- And flour and baking powder
- whisk until smooth
- Add drained corn and grated cheese. Stir well.
- Put butter and oil in a flying pan.
- Heat until bubbly
- Drop spoonful of the mixture in the frying pan.
- When golden turn over and cook the other side.
- Drain and lay on absorbent paper.
